Franz fell in love with food and cooking at an early age; his parents owned a hotel in Switzerland and he was captivated by gastronomy and was soon busy in his family’s kitchens himself. After culinary college he took to a globetrotting life, gaining experience in places as far-flung as Sweden, Saudi Arabia and China, before settling in Samui.
His style is basically Mediterranean; he likes it, he says, because it combines great tastes with healthy ingredients. But thanks to so much travel – he still maintains a second home in Hong Kong – he’s able to cook dishes that originate just about anywhere in the world: Chinese, Asian and Middle-Eastern cuisine are very familiar to him.
All this has stood him in good stead at Sheraton Samui Resort (Long Talay Restaurant), where he is now the Executive Chef; guests here come from all over the world and he’s able to cater for everyone thanks to his international experience, which are top quality and prepared with his passion for cooking.
