Chef Amporn has recently returned to Samui after working in Saudi Arabia where he was in charge of 38 chefs working for Princess Hassa bint Abdulaziz Al Saud and her family. Drawing on this unique experience, he is keen to try and incorporate some flair and creativity into the dishes at ‘Club akyra’ while at the same time, not distracting too much.

Nick Hall

Originating from Nottingham in the UK, Nick has been residing in Thailand for the past nine years. After completing a formal culinary training program in his native country, he went on to work for both country house hotels and stand alone gourmet modern British restaurants.

After taking a year to explore the world, Nick decided to make Thailand his home and headed to Phangan Island to create his very own fine dining restaurant called Me’nu, in partnership with wife Ann. After two years at the helm of this stunning eatery, he headed over to the island’s first five star resort,the Rasananda resort and spa.

A proud father of two beautiful girls, Nick decided to make a move over to Samui Island and take the helm of the kitchens at the prestigious SALA Samui Resort and Spa early in 2011.

He is known for his high standards and attention to detail; his style of cooking described as modern, using only the freshest and finest ingredients available. He always insists on everything being made by hand and from the heart.

Featuring over 50 different dishes of the stringy strands, Noodle House celebrates noodles as they have never been celebrated, showcasing a range of noodle dishes from Thailand, Malaysia, Indonesia, Japan and China.

Suck them up in soup, enjoy them dry, try a teppanyaki creation or go a little crazy and sample them in some of the creative concoctions such a special skewer concept combining homemade noodles with shrimp, tuna, beef, foie gras, salmon and miso or Gindara miso glazed black cod - all of which goes that goes a treat with a few suds of ice cold beer from a selection of hand-picked Asian beers and wines.

Other highlights include edamane and pork gyoza appetizers, yum woon sen seafood salad featuring glass noodles, laksa noodles from Malaysia, tempura soba, kao souy gai from northern Thailand, mee goring from Indonesia as well as a special healthy menu items.

Noodle House is the latest innovation from akyra Chura Samui, the 61-room and suite resort perched up on the quiet northern end of Chaweng Beach.

Sathit Muangprom

“The thing I most wanted to do was be an architect,” says chef Sathit Muangprom. “I always wanted to create something special, something that would stand out.” He then discovered he also loved cooking. However, he didn’t choose one dream over another. He combined both and the result is 9GEMS Lounge Restaurant. Both the architecture and design of the restaurant are all his creation and are impressive in their own right. And what you eat here is equally as good, making this a dining experience to remember.

Sathit has had plenty of cooking experience. He originally learned in Thailand, where he began providing dinners for his brothers and sisters, but then went to Europe. After spending two decades in Switzerland, where he learned European cuisine, plus traveling all over the world, it’s not surprising his tastes are very eclectic.

“My favorite dishes,” he says, “are fusion tandoori chicken salad and Home-made potato gnocchi. I also love Thai-style sea-bass with chili and basil. I make lots of Italian dishes as well as French patisserie. I’m not one for ready-made food from a shop – I prefer to make everything by myself.”

Sathit is a great believer in multi-culturalism and aims for his food to be like the restaurant he’s built and designed – a combination of both Thai and European. With both quality design and food, he’s succeeded in combining very different creative dreams.

JEAN-FRANÇOIS BROUCK

Jean-François graduated from the Ecole Hotelière Provinciale de Namur in Belgium and spent the next six years working with great chefs such as Freddy Van Decasserie in the 2-star Michelin restaurant, La Villa Lorraine, before going on to De Bijgaarden, and then refining his craft alongside Yves Mattagnes at Sea Grill.

Then, like many of today’s hot chefs, he decided to see the world and experience what other more exotic cuisines could teach him. Jean-Francois found himself at the world’s most luxurious hotel, the ‘7-star’ Burj Al Arab Hotel in Dubai. As Sous-Chef in charge of their signature restaurant, The Al Mahara Seafood Restaurant, he created their quarterly menus and embraced the excitement and knowledge of working in the most sumptuous hotel in the world.

Still in need to see the world he headed off to Singapore as Chef de Cuisine for the opening of a new cutting edge restaurant , The Cliff, awarded by the World Gourmet Summit. Then on a visit to Bali, he became enchanted with the island and its people and decided to make it his home. He spent 4 years there working in various restaurants and hotels such as CasCades Restaurant at The Viceroy Bali, which he decided to make his signature restaurant, creating an outstanding menu of fine imported produce with both Western and exotic Asian influences.

After a few years working at Kai Restaurant/Swissotel Moscow, ranked as one of the top 10 restaurants in Moscow, Jean-Francois decided to join the Zazen team in Samui in March 2014 in order to take over the remarkable work of Chef Stéphane Courtin. In addition, Jean-François is in charge of launching the new Belgian brasserie, Café Zazen, located in the new Central department store in Chaweng.

Sometimes it’s good not to follow the crowd.

Eclectic by nature, artistic by character and thoroughly unique in style, The Library introduces a new restaurant concept, which whips together music, art and design in celebration of good food and the most fantastic drinks.

The newly-opened Drink Gallery seems to have stepped out of an extremely cosmopolitan city to suddenly grace the beach road in Chaweng. Vibrant and modern, it’s more of a chilled-out venue rather than being a self-conscious one. Step in and be welcomed by staff who are friendly and truly professional; they quickly appear when you need them but don’t hover.

The atmosphere is laid-back, and it’s hard not to relax here. Everything is spotlessly clean and the restaurant has a neat, uncluttered feel to it. The place is designed by The Library, which is situated just next door and is known for its minimalism and chic interiors. The Drink Gallery is less minimalistic, though most visitors will be immediately aware of its spaciousness. It must have one of the highest ceilings of any bar in Thailand - two stories high! A glass wall, meanwhile, all the hustle and bustle in the street. Outside there’s an enormous terrace where you can enjoy the night air.

The drinks menu is varied and strikingly original, thanks to Dhasan “Golffy” Prabhananda. He jokingly describes himself as a “mixultant” and says his inspiration comes mainly from the kitchen and from cooking. Many of his drinks are creative and uniquely blended. Try Jarhead - vodka mixed with mint, lime, apples and kiwi served in a mason jar, or Blushed - rum with watermelon, lime, vanilla caster sugar and fragrant Italian basil.

Drink Gallery opens for brunch at 11am and operates right till 1am. Food is dependably good, tasty and portions are ample. Signatures include Samui Rangoon, Roasted Garlic Ravioli and Seared Australian Veal Steak among others.

Easily one of the most sophisticated of Koh Samui’s venues for eating and drinking, 9GEMS Lounge Restaurant appears to be ahead of itself in time. It looks as if it’s stepped right out of an interior design magazine. The chic minimalism of the setting with to-die-for interior design gives 9GEMS both a relaxed and a spacious feel at the same time.

Thanks to its location, perched right on top of a hillside, you’ll experience some of the best views on the island. The whole of Chaweng is spread out before you, making this an ideal place to watch the sun go down while you enjoy a long drink or cocktail.

When it comes to dinner, you can expect the dishes to be every bit as sophisticated as the décor itself. Enjoy contemporary takes on Thai and European cuisine. For starters, try fusion chicken tandoori salad, with the dish subtly nuanced by soy sauce and balsamic vinegar. Tagliatelle comes with pesto or bolognese sauce but you can also try it with Thai-style massaman curry. The bread, by the way, is home made, as is most of what you’ll find at 9GEMS with very little in the way of any outside processing at all.

When it comes to main courses, enjoy a roasted aurora rack of lamb marinated in pesto and tandoori spices or if you’re a fish lover, try grilled tuna with pepper on an asparagus bed with egg risotto. Tastes at the restaurant cross effortlessly between east and west, and have been created by the chef-owner who grew up in Thailand but lived for years in Europe.

With its excellent food, décor and views, recently-opened 9GEMS Lounge Restaurant is definitely worth heading for.
