Chef Thanawut Chaiwanwut – or simply Chef Eak, as he’s usually known – hails from Phuket and honed his culinary style at vocational college in Songkhla. He has an enormous amount of work experience; he first started as a cook’s helper and over the past 12 years has worked his way up through five-star resorts in Phuket and Krabi and has also trained at the Michelin-starred Black Swan, in Oldstead, England.
He’s been executive chef at The Tongsai Bay since July 2015 and has gained a name for himself thanks to his widely ranging culinary skills in Western, Thai and Asian fusion cuisine. Chef Eak runs all three restaurants here, commanding almost forty staff.
He takes a flexible approach to cooking, ensuring that diners are looked after each according to his or her wishes; he’s a friendly figure and together with his team, he’ll do his utmost to ensure that everyone is satisfied with their time at The Tongsai Bay. He’s therefore able to deal with all manner of requests, including allergies, gluten-free foods and more.
